Trust me ! I love to cook but when I've had a really really long night staying up with my cutie pie Logan and don't wanna get up to make breakfast I can grab one of these and have it with some yogurt and fruit. These are a great alternative to buying sugary fibre bars. They're so easy to make and can even be eaten raw. It is very simple but quite filling when you eat a few of these in the morning. Enjoy!
INGREDIENTS
2 cups shredded coconut
1 1/2 cup oats
4 ripe bananas
¼ cup raisins
¼ cup dried cranberries
2 – 3 tablespoon peanut butter
METHOD
Preheat oven to 350 degrees F.
Line a cookie sheet with parchment paper.
In a bowl mash the banana thoroughly. Add the coconut and oats and stir with fork or use blender to pulse the mixture together.
Separate the mixture into four small bowls. To one bowl stir in peanut butter and a second bowl stir in raisins and a third stir in dried cranberries.
Roll mixture into small balls. Place each ball on the lined cookie sheet and press to flatten.
Bake for 25 – 30 minutes.
YIELD: about 12 - 16 cookies
